The Boochcraft Process

We added an additional step to the kombucha brewing process in order to make our booch a fizzy alcoholic drink. To turn it into high-alcohol kombucha, we add more sugar and a new strain of yeast after the initial fermentation is complete. After that, the mixture is air locked in a closed fermentation tank to prevent aerobic bacteria from metabolizing the additional yeast into acids. We ferment the kombucha for an additional 10 to 14 days in order to get our alcohol level up to 7% ABV! Learn more about our process of making Boochcraft here.
