Kombucha is a fermented tea made with a Symbiotic Culture of Bacteria and Yeast (SCOBY). It is typically fermented with cane sugar in a fermentation process that takes about 2 weeks. The finished product is tangy, slightly carbonated, and filled with beneficial bacteria and probiotics which is said to help with digestion and immune function. Most kombucha only has small traces of alcohol. But we had a better idea.
We wanted booch with a buzz, so we added an additional step in our fermentation process. To make high alcohol kombucha, we add more sugar and a new strain of yeast after primary fermentation is complete. Then, the mixture is air locked in a closed fermentation tank to prevent aerobic bacteria from metabolizing the additional yeast into acids. We ferment for an additional 10 to 14 days to get our alcohol level up to 7% ABV. Woo!

Each time we order fruit we start with our local farmers and work out from there. Our flavors are designed with seasonality in mind.
Our high alcohol kombucha is 100% Gluten Free, no gluten is ever processed in our facility.
All water in our kombucha has been run through an RO process to remove heavy metals and then we add in healthy minerals.
