The first thing to note of this flavor is the beautiful color, a gift from the beets! Breathe in the aroma and you’re immediately struck by the sweet, earthy character of the beets. Next, notes of the sweet orange include both juice and orange peel. You may notice some tartness from the pomegranate, and a heightened acidity and sharpness from the red wine vinegar, and some woody or peppery notes from the rosemary. Take a sip: similar to the aroma, the beet root is often the thing people will taste first with this flavor; it delivers that earthy yet sweet flavor characteristic of fresh beets. Next, the orange brings a bright juiciness, while the pomegranate adds tartness and balances the sweetness of the beet and orange juices.
