Summer’s aroma wouldn’t be complete without the sun-ripened sweetness of strawberries. This booch is at once otherworldy and familiar; mixing the funky tang of kombucha with the classic pie vibe of strawberry and rhubarb.

Raw kombucha, Strawberries, Rhubarb, Lemons, Coriander, Paprika, Yeast

Layered and nuanced, you should be uncovering different levels to this booch as you enjoy it. First of all, the strawberry aroma is clean and bright, present throughout the drinking experience. Additionally, trying to showcase the rhubarb more and having it as a "heavier hitter", this flavor is more tart than your typical baked good with strawberry in it. On the front of the palate I detect the strawberry with the nice sweet and floral flavor, which almost immediately blends into a combination of strawberry rhubarb flair. The rhubarb rounds out the middle and back end of the flavor. With the rhubarb at the end it takes the flavor into the more acidic realm and causes you to want to drink more. The end of the palate also brings out the lemon so that there is an even acidic feel and it does not drop off heavily, you may also taste some of the lemon juice at this point with almost a jump up of acidity at the end. Finally, the last thing I taste is the paprika, and not as much in the flavor profile, although I will get some vegetal components but more so in a slight spice at the back of the throat.
